Nureen's Sweet Love Pancakes

Make these pancakes for the ultimate Big Jubilee Lunch

Chef Nureen is preparing for the feast of the summer. This June, Nureen will be hosting a Big Jubilee Lunch for her Feed Me Good community, and hopes hundreds of people will come along to take part in the celebrations.

Nureen set up the National Lottery-supported Feed Me Good project in 2014, to help teach people how to shop, cook and eat well on a budget. You can read more about her story here.

As a special treat, you can get your hands on her newly created Sweet Love pancake recipe. But, as you tuck into these delicious pancakes, do spare a thought for Nureen (pictured), who will be whipping up hundreds of these for her Big Jubilee Lunch.

Nureen’s Sweet Love Pancakes

Gluten and Dairy Free: To make this vegan simply swap out the egg for 1 tablespoon of apple sauce or 1 mashed ripe banana.

Ingredients: serves 1-2 people

For the pancakes:

  • 100g oat flour (take oats and blitz them until a fine consistency)
  • 1 large egg
  • 20ml vanilla essence
  • 1/2 tsp. baking powder
  • 30g olive oil or rapeseed oil
  • 120ml of coconut milk (alternative option can be cow's milk)

Pancake toppings:

  • 20g of granola
  • 5 strawberries
  • 1 handful of blueberries
  • 2 tbsp. almond butter or any nut butters or alternative nut free option

For the Sweet Love syrup:

  • 50g of unrefined sugar or coconut sugar
  • 300ml water
  • 80g of hibiscus dried flower aka Jamaican sorrel flowers
  • 4cm of fresh ginger, peeled and halved


For the Sweet Love syrup:

Step 1: Boil all the ingredients in the Sweet Love syrup ingredients list in a small pot for 15 minutes until the water has reduced by half.

Step 2: Remove the flower and ginger, then set them aside.

For the pancakes:

Step 1: In a medium-size bowl, mix all the following ingredients: oat flour, baking powder, milk, egg, 1 tbsp. oil and vanilla essence.

Step 2: Mix well until the batter is semi-thick consistency.

Step 3: Take a medium frying pan and add the oil; allow to heat for 20 seconds. Now spoon 3 tbsp of your pancake batter into the centre of the pan. Allow to cook for 3-4 minutes, and when you see tiny bubbles forming and slightly golden around the edges of the pancake, you can flip it over. Cook for the remaining 3-4 minutes on the other side and pop the pancake on a plate. Repeat the process until you have finished the batter.

Step 4: When the pancakes are ready, serve immediately. Releasing your inner artist, sprinkle the diced strawberries, blueberries, dried berries, granola, pour the almond butter and drizzle the Sweet Love syrup. Enjoy your Big Jubilee Lunch.
